One Pot Slow cooked BBQ Pulled Beef Rolls

One Pot Slow cooked BBQ Pulled Beef Rolls

Nothing is simpler and more tasty than this easy one pot, slow cooked BBQ pulled beef, prepared in the morning and left to its own devices while you get on with your busy day. There’s nothing better than coming home to be greeted by the tantalising aroma of your evening meal ready and waiting.

My slow cooker is a dinosaur of a thing, inherited 3rd hand from my step dad’s mum and yet not a week passes when it’s not out on my , cooking a family meal which will save untold stress and working mum guilt.

With store cupboard ingredients, the main expense is the meat but as long as you look for the Red Tractor logo which guarantees the meat you’re buying is quality assured, you can get away with a much cheaper cut. In fact this whole meal cost just under £7 and served 4 adults, tasty peasant food which doesn’t skimp on flavour.
Whether you’re out working, doing the weekend sports club run or out on a family day trip adventure, you can make this in advance and not have to worry about starting from scratch when you return home. Served with soft baps, coleslaw and salad there’s no skimping on your daily veg intake.

One Pot Slow Cooked BBQ Pulled Beef

  • 2.2lbs beef joint
  • 2 tbsp smoked paprika
  • 2 tbsp olive oil
  • 1 medium red onion sliced
  • 200ml bbq sauce
  • 3 tbsp soft brown sugar
  • 2 tbsp cider wine vinegar
  • 1 tbsp Worcestershire sauce

To serve

  • 6 Soft white bread rolls
  • colesaw
  • lettuce

Cut the joint into two pieces and rub a tea spoon of the smoked paprika over it.

Heat 1 table soon of oil in a large frying pan and sear the meat on all sides then move to the cooker.

Using the same frying pan heat the remaining oil, add the onion and sauté for 5 minutes.

Add the remaining ingredients to the frying pan, heat through for a minute or two then pour over the meat.

Cook for 4 hours on high or 8 hours on low, resisting temptation to remove the lid during cooking as this adds to the cooking time.

When you’re ready to serve, move the meat to a chopping board and shred the meat with two forks then mix with some of sauce and onions.
