Slow Cooker Sausage and Bean Casserole


In the cooler months, I’m a huge fan of slow cooker meals. Nothing beats the comforting smell that hits you when you come through the front door on a cold winters evening.  It also pacifies the tea time rush and leaves any meat tender enough for the youngest of chewers.

I try and avoid prepared slow cooker sachets or sauces so I know exact;y whats in there and can feed it to the toddler , you can be more creative with the ingredients as I find the natural flavours intensify the longer it cooks.

So here goes, my

Family Friendly Sausage and Bean Casserole.

Prep time – 30 mins

Cooking time 6-8 hours


•Sausages (As many as you feel you need.)

•1 Red onion

•Tin of butter beans

•6 table spoons of red lentils

•2 tea spoons of smoked paprika

•1 beef stock cube

•2 tea spoons of smoked paprika

•1 beef stock cube

•1/2 pint boiling water

•1 table spoon of tomato puree

•dash of salt and pepper



#1     Add the boiling water, beef stock and smoked paprika to the slow cooker and help it dissolve by stirring with a fork

#2     Add the tomato puree

#3     Finely chop the onion, add this along with the beans, lentils and sausages

#4     Season with the salt and pepper.

#5     Leave to cook, resisting the urge to open the lid!


I serve it with a sweet potato and Maris Piper mash which can be prepared beforehand then reheated for 30 mins while you prepare and steam vegetables (We’re an old faithful, carrots and broccoli family.)
