When you’re a well-practiced 1001-things-to-do-with-mince type family, there comes a day when you want to step away from the spaghetti bolognese, cool it with the cottage pie and loose the lasagne but with my husband and I both working having meals which are quick and easy to prepare are a must. When we’re feeling adventurous we’ll extend our mince repertoire to something more international.
Tacos for tea were always a firm favourite when I was a teenager and one of the first meals I remember my little brother making so over the years I’ve developed a knack of choosing the right shape taco to stuff without suffering taco fall out. Those of you who’ve tried them will know what I’m talking about. It’s that moment when you bite into it, only for everything to collapse and land of you plate.
And then there’s the next problem, do you start eating from the side, with the danger of everything falling out the other end or from the top and having to eat through the layers of filling. It’s something which divides our family and our family taco meal times.

What I love about our taco Tuesdays is that it creates conversation and interaction from the moment I start cooking. I’ve been showing the boys how to make simple meals for some time now, helping brown the mince, measure out the water and stir in the mix while another prepares the salad and grate the cheese. And when we all sit down to eat, there are lots more opportunities for team work.
Being a vegetarian, I don’t miss out either. As well as using the taco mix for some beef mince, there’s mixed beans, grated cheese, cucumber, lettuce, chopped tomatoes, red pepper and mushrooms on the offering. So something for everyone.
So what did the man and boys think of this new take on our taco night? Well lets just say that I fully intended to take a whole lot more photos but the speed at what these bad boys went down says it all!
